Gluten free Thin Mint Cookies. A dream come true, right? Well, it would be if they existed! According to the Girl Scouts website, Thin Mints are consistently the best selling Girl Scout cookie. During the 2011-2012 season, they accounted for 25% of cookie sales. Yeah, one in four boxes sold by those tiny tots were our beloved Thin Mints! (I emailed them for 2012-2013 statistics and will update this if they respond.) In fact, they are so in demand that other companies have picked up official Thin Mint lines of their own products such as ice creams, coffee creamers and more.
Why does any of this matter? I mean, technically it doesn’t, unless you are like me and miss them like crazy. Bet you can’t go to work without a coworker passing around an order sheet to you or to the grocery store without a bunch of energized little scouts surrounding a table stocked with everything you can imagine (and ready to pounce). Meet the Ghirardelli Mint Cookie Chocolate Bar. If I was blindfolded, I’d have thought I bit into a Thin Mint cookie. It may have even been better! It has a velvety outer layer of milk chocolate, with a crunchy peppermint chocolate cookie center. The shape may be different but the minty flavor and crispy texture are spot on. Ghirardelli is a more gluten free friendly company because it only manufactures one product with gluten and is said to clean between production runs. In addition, their labels clearly indicate allergens in bold on the ingredient lists, making it one of the safer chocolates to stick to. Hopefully, this will tackle your cravings and make the annual cookie push a little easier to stomach.
